It is the process used to produce kopi luwak coffee that has cemented it as one of the most special and exotic coffees in the world. When produced ethically, the best coffee beans are partially digested by discerning civets. This process changes the structure of the proteins in the beans, which are then collected and processed into coffee, therefore, resulting in a less acidic and smoother drinking experience.

The Coffee Tree

It is the flesh of the coffee cherries from the coffee tree, native to Asia and Africa, that the civets are after. The seeds of the fruit contain caffeine which in all cases -except for that of the civet- act as a defence against animals. Due to the civet’s preference for only the best and ripest coffee cherries, unethically produced kopi luwak coffee is rarely passed off as the authentic experience to those in the know as the civets which are held captive are not able to roam and select the best coffee cherries.

The Palm Civet

Palm Civets are small mammals which resemble cats, known commonly in Indonesia as Luwaks. Before kopi luwak emerged as the popular choice, civets were considered pests by farmers and were often shot on sight. The civets, with the exception of those held captive in unethically run coffee plantations, benefited from the growing kopi luwak industry.
